SAM’S UNCLE’S SPOONBREAD

Our intern, Sam, shares his family recipe from when they lived in Durban. They would eat it almost three times a week with a side of dandelion salad - we don’t know why it’s called spoonbread and we also don’t know who Patrick is (see note below).

Ingredients

  • 2 eggs
  • 1 can cream style sweetcorn
  • 1 can evaporated milk
  • ¾ cup mielie meal
  • ½ t salt
  • 1 t baking powder
  • Dash of oil
  • Chopped green chillies
  • 1 cup grated cheese

Method

  • Mix all ingredients together.
  • Pour into baking dish and add extra cheese on top.
  • Bake at 180°C for one hour.

*Patrick says to add fried onions
