Makes: 4 - 6 jars
INGREDIENTS
- 20 ml oil
- 100 g onion, julienned
- 500 g carrots, grated
- 150 g red and yellow peppers, diced
- 50 g garlic, chopped
- 2 cans baked beans
- 2 T curry powder
- 50 g tomato paste
- 1 1⁄2 T BBQ spice
- 20 ml oil
METHOD
- Add oil to the saucepan on medium heat and sauté onions until golden brown.
- Add the curry powder and BBQ spice, carrots and garlic and cook for 4 minutes.
- Add the diced peppers, cook for 2 minutes, then add tomato paste and baked beans and simmer for another5 minutes.
- Taste for seasoning and adjust to liking.
- Ready to serve hot or cold.
