MAUREEN'S THELELE

Maureen is the matriarch of Tiny Empire, the co-working space in Cape Town's CBD, where our studio is located. Maureen shares some of her Malawian heritage with this delicious okra recipe.

Ingredients

  • 400 g okra
  • 1 t baking soda
  • 1 t salt
  • 2 large tomatoes
  • 4 large spinach leaves

Method

  • Thoroughly wash the okra, tomatoes and spinach.
  • Chop up the spinach and dice the okra and tomatoes into small pieces.
  • Add half a cup of water, baking soda and salt to a pot.
  • Add the chopped-up spinach and okra to the pot and cook for about 5 minutes.
  • Add the diced tomatoes, keep stirring and continue to cook for an additional 10 to 15 minutes.
  • Best served with pap.
